4oz of each, caster sugar, sponge flour, margarine (I use stork), 2 medium eggs - plain mix....
To mix it up a bit
3oz flour, 1 oz cocoa - plain choc
3 oz flour, 1 oz cocoa, 2oz choc chips - double choc
2 mashed nannas, 2oz nuts, 1 tsp vanilla extract - nanna nut
3oz flour, 1 oz cocoa, 2 mashed nannas - nanna choc
3 oz flour, 1 oz cocoa, 2oz chpooed glace cherries - choc cherry
2oz fresh blueberries, 1 tsp vanilla extract - blueberry
3oz flour, 1 oz cocoa, 1 tsp orange extract - choc orange
3oz flour, 1 oz cocoa, 2oz chopped strawberries - choc strawberry
3oz flour, 1 oz cocoa, 2oz milk choc drops, 1 tsp coffe extract - mocca choc
Heat oven to 180 C
Put paper cases into muffin tray (needs 12)
Cream margarine and sugar until a pale creamy colour
Add 1 egg and 2tbsp of flour (sieved) beat together
Add 2nd egg and any essence (vanilla etc) and 2tbsp of flour (sieved) beat together
Add remainder of flour/cocoa sieved beat together
Add the rest of the ingredients and stir in
Spoon into 12 cupcake/muffin papers in a deep muffin tray
Bake for 15mins or until a cocktail stick comes out clean when pushed into the middle.
These will keep for 3 days - allegedly, but in my house 1 is good going!
